Bacon Jalapeno Popper Egg Rolls... MMMmmmmmm.....
Yeah... really, is there any more to say?
The dipping sauce is apricot jam, thai chili garlic sauce, sesame oil, and soy sauce. The sauce is so out of my usual taste that I almost didn't try it, and I'm so glad I did!! It cuts the richness of the cream cheese and bacon, and gives an amazing bit of sweetness that counteracts the spiciness of the jalapeno.
And, the really good news is that I have more egg roll wrappers left to play with! ; )
Bacon Jalapeno Popper Egg Rolls
6 slices bacon
8oz cream cheese, room temperature
2-3 jalapeño peppers
1-2 green onions, optional
Egg roll wrappers
Apricot Dipping Sauce
2 tbsp apricot preserves
1 tbsp chili garlic sauce
1 tbsp soy sauce
1 tsp sesame oil
Fry the bacon until crispy in a 375 degree oven or on the stove top; drain.
Finely dice the jalapenos, removing the seeds for less spicy egg rolls. Dice the green onions.
In a medium bowl, add the cream cheese, and mix until creamy. Add the jalepeno and green onion, mix in. Crumble the bacon into the bowl, mix in gently.
On a cutting board, lay out an egg roll wrapper with one corner pointing towards you. Put about 2 tablespoons of filling in the bottom third of the wrapper; fold the bottom corner up and over the filling, and use it to shape the filling into a tight log. Fold the sides of the wrapper over the filling, and roll up tightly. Moisten the top third wrapper edges with water before rolling the last part up, this will help seal the egg roll. Set the finished roll aside on a baking sheet lined with waxed paper, and continue until the filling is used.
When all rolls are done, fry them in hot oil heated to 375 for about 5 minutes, until the rolls are golden brown and crispy. Serve with dipping sauce.
Unfried rolls can be frozen while still on the baking sheet; place frozen egg rolls in freezer bags to store. They can be placed in a heated fryer while still frozen (do not thaw!) and cooked for just a few minutes longer. These are great to have on hand!
This recipe makes about 10-12 rolls.
