Bacon, Sausage, and Cheese Frittata

I've never made a frittata before. I've never eaten a frittata before. In fact, I've apparently never even spelled the word out before, because I've been spelling it "fritatta" on my food lists all day. It's an Italian egg dish; similar to a quiche. Except it doesn't have a crust. And there isn't any cream added to the eggs. And it's cooked mostly on the stove. Okay, it's not THAT similar to the quiche, when you get down to the details. ; )

I sauteed bacon in a smaller frying pan, then added sliced chicken sausage and sliced onion; after a few minutes, I added sliced mushrooms and green peppers, and let that cook a few more minutes.  Then I added fresh diced tomato, and handfuls of fresh spinach. While that cooked, I beat 5 eggs in bowl, and poured it on top of the vegetables.  Sea salt was sprinkled on top, and  I pushed the eggs around a bit with a rubber spatula to help them cook evenly. As the egg sets, you lift it a bit to let the uncooked egg run underneath; this helps it form a cake. An egg and veggie cake. Otherwise known as a fritatta.  Damn, a frittata.  After a few minutes, the whole thing started to set; I put it under the broiler for a few minutes to finish cooking while I grated fontina and gruyere cheeses. I pulled the frittata out, sprinkled it with the cheese, and put it underneath the broiler for another minute to melt the cheeseI was a little nervous about the fritatta sticking to the pan,so when I took it out of the oven, I ran a rubber spatula around the edges... and the frittata came out easily when pushed! Yay!!!I cut it like a pie, and it didn't fall apart... nor was it overcooked. It turned out perfect!  I plated it with a simple salad tossed with olive oil, vinegar, and sea salt; and also had a steamed artichoke on the side (yay artichokes, naturally high in magnesium, of which most Americans consume about HALF of the daily recommended amount.... magnesium intake dropped with the induction of agriculture and processed foods into our daily diet, yet another problem with the current SAD (standard american diet).  The dinner was fast, easy, and SUPER happy. I don't know why I haven't made frittatas before, they are easier than quiches, they are gluten free, and they are HAPPY! <3
