Gluten Free Waffles

I love waffles. I rarely eat them, mostly because I have reactive hypoglycemia, which means that roughly three hours after eating waffles with sugary maple syrup, I'll have a terrible blood sugar crash that leaves me shaky, dizzy, headachey, tired, and insanely hungry again. Apparently, I am one of those lucky people who produce too much insulin in response to eating sugars and high-glycemic index foods, even though I have normal blood sugar levels otherwise. This is one of the reasons I switched to a primal diet; by eliminating most sugars, processed foods, and high-carbohydrate foods, I don't have episodes of reactive hypoglycemia unless I cheat.  There are workarounds to try to avoid the reaction, but they work better with dinner-type main dishes, and so waffles and pancakes are rarely on my breakfast menu.  Until I started researching gluten free baking. Which isn't automatically low-glycemic index levels, but it does help. And I will continue to learn about it, and swap out ingredients until I get to a non reactive waffle. In the meantime, I  am so happy to have waffles for breakfast today! I topped them with butter (mmmmm, butter......) and agave syrup, a natural sugar from the agave plant, the same wonder that brings us tequila. Agave syrup has a much lower glycemic level than cane sugar, making it ideal for diabetics and people wishing to reduce the amount of processed foods from their diets. On the side, sous vide poached eggs and bacon.

Gluten Free Waffles

3/4 cup rice flour (brown or white or combination)
1/4 cup tapioca flour or sweet rice flour
1/4 cup potato starch
1/2 tablespoon baking powder
1/2 teaspoon salt
1/2 tablespoon sugar
1/2 teaspoon vanilla
2 eggs, separated
1/4 cup cooking oil
3/4 cups milk

Mix all dry ingredients together in a bowl.  In another bowl, mix the vanilla, egg yolks, oil and milk. Add to the dry ingredients and mix thoroughly with wire whip.

In a separate bowl, beat egg whites until soft peaks form. Gently fold into batter.

Cook in waffle iron as directed, spraying iron with cooking oil spray as needed.

Makes approximately 5 waffles.
